En un bol mezclaremos la primera parte de az\u00facar y de sal muy bien, y pondremos sobre ellas las yemas limpias de germen. Despu\u00e9s en el mismo recipiente, pondremos la segunda parte de az\u00facar y sal sobre las yemas. Dejaremos reposar durante 20 minutos y pasaremos las yemas a otro bol con agua para limpiarlas.
