Our Alta Expresión Acorn-fed 100% Ibérico Pork selection features a range of exceptionally high-quality meats that boast an incomparable flavour together with a unique texture, tenderness and juiciness.

These qualities are synonymous with our 100% Ibérico Breed pigs, reared in fully free-range environment on the pastures of the Pedroches Valley – a one-of-a-kind environment – and fed on a diet of herbs and acorns during the fattening season (Montanera). This magical season, which runs from November to February, falls at the same time as the last phase of feeding of our animals, during which ripe acorns provide the meat with a full range of organoleptic and nutritious benefits.

A select cut with endless culinary possibilities, taken from between the lumbar vertebrae, the loin and the ribs. It is a particularly tender meat as it comes from a very static muscle. A piece from the “extra” class, and highly popular as it is particularly tender and juicy. Supplied in medallions for easier cooking.
