These characteristics come from our 100% Iberian breed pigs, raised freely in the pastures of the Valle de Los Pedroches—a one-of-a-kind natural environment—and fed on grass and acorns during the Montanera season.
This magical period, between November and February, marks the final feeding phase of our animals, when ripe acorns are responsible for imparting all the exceptional sensory and health properties to the meat.
This particular cut comes from the lower part of the jaw. It stands out for its exceptional flavor and an especially tender, melt-in-the-mouth texture, making it one of the most sought-after cuts of Iberian pork in recent years.
